Turtle Bar Cookie Recipe
The turtle bar cookie recipe tastes just like the famous candy. Chocolate, caramel, and pecans top a buttery crumb crust!
Ingredients
Crust:
2 cups all-purpose flour
1 cup (packed) brown sugar
1 stick (1/2 cup) salted butter, softened
1 cup pecan halves
Filling:
5 1/3 tablespoons (2/3 cup) salted butter
1/2 cup (packed) brown sugar
1/2 cup butterscotch chips
1/2 cup semi-sweet chocolate chips
Hardware
Large bowl
1-quart sauce pan
13x9-inch baking pan
Mixer
Step 1: Preheat oven to 350 degrees F.
Step 2: In a large bowl, combine butter, flour, and brown sugar, beat at medium speed until mixture resembles coarse crumbs.
step 3: Press mixture onto bottom of ungreased 13x9-inch baking pan.
Step 4: Sprinkle pecan halves over unbaked crust evenly; set aside.
Step 5: In a 1-quart sauce pan, combine 2/3 cup butter and 1/2 cup brown sugar. Cook over medium heat, stirring constantly, until mixture comes to full boil. Boil, stirring constantly until candy thermometer reaches 242 degrees F or small amount of mixture dropped into ice water forms a firm ball (2-3 minutes).
Step 6: Pour mixture over crust.
Step 7: Bake 18-20 minutes or until caramel layer is bubbly. Immediately sprinkle with butterscotch and chocolate chips.
Step 8: Let cool 5 minutes, then swirl with knife to create marbled effect.
Step 9: Cool completely before cutting into bars.
Makes about 36 bars.
