Strawberry Pecan Cookie Recipe



The strawberry pecan cookie recipe uses fresh strawberries, an ingredient not often found in cookies. Once you taste these little gems you’ll start growing your own strawberries!

Ingredients
1 cup shortening
1 1/2 cups granulated sugar
2 eggs
3/4 cup strawberry puree (about 7 large strawberries)
3 cups all-purpose flour
1 teaspoon salt
1/2 teaspoon baking soda
3/4 cup chopped pecans
Red food coloring (optional)

Cookie sheets
Mixer

Step 1: Preheat oven to 350 degrees F.
Step 2: Lightly grease cookie sheets; set aside.
Step 3: In a medium bowl, whisk together flour, salt, and baking soda; set aside.
Step 4: In a large bowl, cream shortening and sugar with an electric mixer.
Step 5: Add egg, one at a time, beating well after each addition.
Step 6: Blend in strawberry puree.
Step 7: Gradually add flour mixture to creamed mixture.
Step 8: Stir in pecans and food coloring, if desired.
Step 9: Drop by tablespoons 2 inches apart onto prepared cookie sheets.
Step 10: Bake for 12-15 minutes or until edges are lightly browned. Transfer cookies to cooling surface.

Makes 72 cookies.
