Scandinavian Almond Bars Recipe



The Scandinavian almond bars recipe, like many from this region, is not overly sweet. This creation is delicate and flaky, with a buttery-almond flavor!

Ingredients
1 3/4 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 stick (1/2 cup) salted butter, softened
1 cup granulated sugar
1 egg
1/2 teaspoon almond extract

Topping:
1/2 cup sliced almonds, coarsely chopped
Milk

Almond Icing:
1 cup powdered sugar
1/4 teaspoon almond extract
3-4 teaspoons milk

Step 1: Preheat oven to 325 degrees F.
Step 2: In a medium bowl, whisk together flour, baking powder, and salt; set aside.
Step 3: In a large bowl, beat butter with an electric mixer set on medium-high speed for 30 seconds.
Step 3: Add sugar; beat until combined.
Step 4: Beat in egg and almond extract until combined.
Step 5: Beat in flour mixture.
Step 6: Divide dough into four equal portions. Shape each portion into a 12-inch-long roll. Place two rolls 4-5 inches apart on an ungreased cookie sheet. Flatten each roll until it is 3 inches wide.
Step 7: Brush flattened rolls with milk.
Step 8: Sprinkle with chopped almonds.
Step 9: Bake for 12-15 minutes or until edges are slightly browned. While still warm and soft on the cookie sheet, cut each roll diagonally into 1-inch-wide strips. Transfer cookies to cooling surface.

Almond Icing:
Step 1: In a small bowl, stir together 1 cup powdered sugar, 1/4 teaspoon almond extract, and enough milk (3-4 teaspoons) to make drizzling consistency.
Step 2: Drizzle each cookie with Almond Icing, let dry.
