Russian Tea Cakes Recipe
The Russian tea cakes recipe goes great with coffee or tea. Best described as a shortbread cookie with preserves or nuts on top.
Ingredients
2 sticks (1 cup) salted butter, softened
1/2 cup powdered sugar
2 teaspoons vanilla extract
2 cups all-purpose flour
1/4 teaspoon salt
Topping:
Fruit preserves
Chopped walnuts
1/2 cup powdered sugar
Hardware
Large bowl
Cookie sheets
Cooking Spray
Mixer
Step 1: Preheat oven to 325 degrees F.
Step 2: Lightly coat cookie sheet with cooking spray; set aside.
Step 3: In large bowl, cream butter and sugar using an electric mixer.
Step 4: Add vanilla extract, scraping down sides as needed.
Step 5: Blend in flour and salt, mixing until thoroughly combined.
Step 6: Roll tablespoons of dough into balls about 1 inch in diameter.
Step 7: Place ball onto prepared cookie sheets. Press down center of each cookie with spoon, forming a depression.
Step 8: Fill each cookie with your favorite preserves, chopped walnuts, or both.
Step 9: Bake for 15-20 minutes, or until golden brown.
Step 10: Transfer cookies immediately onto cooling rack, then dust lightly with powdered sugar.
Makes about 24 cookies.
