Pepper Cookie Recipe
The pepper cookie recipe is a traditional cookie from the Nordic regions of Europe. When baking holiday cookies this year try these for a tasty change of pace!
ingredients
1 1/8 cups salted butter, softened
1 cup granulated sugar
1/4 cup heavy whipping cream
1 teaspoon baking soda
3 1/4 cups all-purpose flour
1 teaspoon ground cinnamon
1 teaspoon ground black pepper
1 1/2 teaspoons ground cardamom
1 teaspoon baking powder
2 tablespoons water

Medium bowl
Cookie sheets
Plastic wrap
Mixer
Step 1: In a medium bowl, whisk together flour, baking powder, ground cinnamon, ground pepper, and ground cardamom; set aside.
Step 2: In a large bowl, cream together butter and sugar with an electric mixer on medium-high until light and fluffy.
Step 3: Stir in whipping cream, baking soda, and 2 tablespoons water. Stir well.
Step 4: Stir in flour mixture to form dough.
Step 5: Form dough into rolls 2 1/2-inch in diameter. Wrap with plastic wrap and refrigerate for 1 hour.
Step 6: Preheat oven to 375 degrees F.
Step 7: Lightly grease cookie sheets.
Step 8: Cut roll into 1/4-inch slices and place 1-inch part on prepared cookie sheets.
Step 9: Bake 6-8 minutes. Transfer cookies to cooling surface.
Makes 60 cookies.
