Pecan Pie Bar Cookie Recipe
The pecan pie bar cookie recipe says it all. This bar cookie tastes just like a pecan pie!
Ingredients
Crust:
2/3 cup granulated sugar
1 stick (1/2 cup) salted butter, softened
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
Filling:
2/3 cup (packed) brown sugar
1/2 cup corn syrup
1 teaspoon vanilla extract
1/4 teaspoon salt
3 large eggs
1 cup coarsely chopped pecans
Drizzle: (optional)
4 ounces (1/3 cup) semi-sweet chocolate chips, melted
1 teaspoon shortening
Hardware
Large bowl
Medium bowl
Microwave safe bowl (optional)
13x9-inch baking pan
Step 1: Preheat oven to 350 degrees F.
Step 2: Lightly grease a 13x9-inch baking pan; set aside.
Step 3: In a large bowl, mix together sugar, butter, and 1 teaspoon vanilla extract.
Step 4: Stir in flour, mix well.
Step 5: Press dough into bottom and 1/2-inch up sides of prepared baking pan.
Step 6: Bake 15-17 minutes or until edges are light brown.
Step 7: In a medium bowl, with a spoon beat together brown sugar, corn syrup, 1 teaspoon vanilla extract, salt, and eggs.
Step 8: Stir in pecans.
Step 9: Pour over crust. Bake 25-30 minutes or until set. Loosen edges from sides of pan while still warm; cool completely.
Step 10: If desired, melt 4 ounces of chocolate chips with shortening in microwave safe bowl.
Step 11: With tines of fork drizzle chocolate over the top of bars.
Makes 36 bars.
