Peanut Butter Jelly Bar Recipe
My nephews and nieces gave this peanut butter jelly bar recipe a unanimous thumbs up!
Ingredients
2 1/2 cups all-purpose flour
1/2 teaspoon baking powder
2 sticks (1 cup) salted butter, softened
1 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
3/4 cup jam or jelly
1/2 cup creamy peanut butter
2 tablespoons powdered sugar

9x13-inch baking pan
Medium bowl
Large bowl
Plastic wrap
Waxed paper
Cooking spray

Step 1: Preheat oven to 325 degrees F.
Step 2: Lightly coat 13x9-inch baking pan with cooking spray; set aside.
Step 3: In a medium bowl, whisk together flour and baking powder; set aside>
Step 4: In large bowl, with electric mixer, combine butter and sugar to form grainy paste.
Step 5: Add egg and vanilla extract, mix until smooth.
Step 6: Add flour mixture and blend at low speed until thoroughly combined.
Step 7: Divide dough into two pieces; form disks and wrap tightly with plastic wrap. Refrigerate for 1 hour.
Step 8: Place two pieces of wax paper onto work area and lightly flour. Using rolling pin, roll out each disk to 13x9 inches by 1/4 inch thick.
Step 9: Slide 1 piece of dough off wax paper onto bottom of prepared baking pan. Press dough 3/4-inch up sides. Refrigerate 10 minutes.
Step 10: Spread half of jelly on dough. Layer peanut butter on top, then remaining jelly. Sprinkle with powdered sugar.
Step 11: Slide second layer of dough from wax paper onto top of peanut-butter-and-jelly-layer. Pinch down side edges all around inside of pan.
Step 12: Bake 35-40 minutes or until golden brown and firm to the touch in the center. Cool in pan and cut into squares.
