Peanut Butter Biscotti Recipe
The peanut butter biscotti recipe is for those who want an uncommon, but great tasting flavor to dip into their morning coffee!
Ingredients
2 3/4 cup all-purpose flour
1 3/4 cup granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
3 eggs, beaten
1/3 cup peanut butter
1/4 cup water
1 1/4 cups roasted peanuts, unsalted

Step 1: Preheat oven to 350 degrees F.
Step 2: Lightly grease cookie sheet; set aside
Step 3: In a large bowl, whisk together the flour, sugar, baking powder, and salt; set aside.
Step 4: In a medium bowl, beat eggs, peanut butter and water together.
Step 5: Stir egg mixture into flour mixture until just combined. Additional teaspoons of water can be added if dough is dry.
Step 6: Stir in peanuts.
Step 7: Divide dough into two portions, and form each into a log approximately 3 inches in diameter. Place the logs 3 – 4 inches apart on the prepared cookie sheet. Flatten each log slightly.
Step 8: Bake for 40 minutes or until light brown. Take out of oven and turn oven off. Cool for 1 hour.
Step 9: Preheat oven to 300 degrees F.
Step 10: With a sharp knife cut each log diagonally into 1/2-inch slices. Arrange slices cut side down on cookie sheet.
Step 11: Bake for 12 minutes. Remove from oven and turn slices over and bake for an additional 12 minutes.
Makes about 30 biscotti.
