Peanut Brittle Cookie Recipe
The peanut brittle cookie recipe uses crushed peanut brittle, peanut butter, oats, and chocolate to make this unique and memorable cookie!
Ingredients
1 stick (1/2 cup) salted butter, softened
1/4 cup shortening
1 cup packed dark brown sugar
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1 egg
1 teaspoon vanilla extract
1 1/4 cups all-purpose flour
1 1/4 cups rolled quick-cooking oats
2/3 cup semi-sweet chocolate chips
1/2 cup crushed peanut brittle
Topping:
1/2 cup crushed peanut brittle
Hardware
Large bowl
Aluminum foil
Cookie sheets
Mixer
Step 1: Preheat oven to 350 degrees F.
Step 2: Line cookie sheets with aluminum foil and lightly grease foil; set aside.
Step 3: In a large bowl, beat butter and shortening with an electric mixer on medium-high speed for 30 seconds.
Step 4: Add brown sugar, baking powder, and baking soda. Beat until well combined.
Step 5: Beat in egg and vanilla extract until combined.
Step 6: Beat in as much flour as you can with mixer, stir in remaining flour with spoon.
Step 7: Stir in oats, chopped chocolate and 1/2 cup of crushed peanut brittle.
Step 8: Drop by rounded teaspoons 2 inches apart on prepared cookie sheets. Flatten each cookie slightly.
Step 9: Bake for 8 minutes. Remove cookies from oven and sprinkle with crushed peanut brittle. Return to oven for an additional 4-5 minutes or until edges are lightly browned. Transfer cookies immediately to cooling surface.
Makes 24 cookies.
