Orange Peel Cookie Recipe



The orange peel cookie recipe is the perfect for parties. Serve these little orange treasures in mini cupcake liners and everyone will think they were bought from an upscale gourmet shop.

Ingredients
2 sticks (1 cup) salted butter, softened
1/2 cup powdered sugar
1 1/2 teaspoons grated orange peel
1 teaspoon almond extract
2 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup finely chopped slivered almonds

Glaze:
1 1/2 cups powdered sugar
1 1/2 teaspoon almond extract
4-5 teaspoons water

Topping:
1/4 cup granulated sugar
2 teaspoons grated orange peel

Hardware
Medium bowl
2 x small bowls
Cookie sheets
Mixer

Step 1: Preheat oven to 400 degrees F.
Step 2: In a medium bowl, with an electric mixer on medium speed beat together butter, powdered sugar, orange peel, and almond extract until smooth.
Step 3: Beat in flour, salt, and almonds until well blended.
Step 4: Shape dough into 1-inch balls and place on an ungreased cookie sheet 1 inch apart.
Step 5: Bake 7-10 minutes or until edges are lightly browned. Transfer to cooling surface, cool completely.

Glaze:
Step 1: In a small bowl, stir all glaze ingredients together, should be a pouring consistency; set aside.

Topping:
Step 1: In a small bowl mix sugar and orange peel.
Step 2: Dip top of each cookie into glaze, then sprinkle with topping. Place cookies in mini cupcake liners if desired.

Makes 40 cookies.
