Oatmeal Raisin Cookie Recipe
The oatmeal raisin cookie recipe is one of my favorites. It has a chewy texture and a great combination of ingredients. We bring these cookies with us to eat when we do outdoor activities.
Ingredients
2 1/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup quick oats (not instant)
1 cup brown sugar (packed)
1/2 cup granulated sugar
2 sticks (1 cup) butter, softened
2 tablespoons honey
2 teaspoons vanilla extract
2 large eggs
8 ounces raisins (about 1 /2 cups)
3 ounces walnuts, chopped (about 1/2 cup) (optional)

Step 1: Preheat oven to 300 degrees F.
Step 2: In a medium bowl, whisk together flour, baking soda, salt, and oats; set aside.
Step 3: In a large bowl, blend sugar with an electric mixer at low speed.
Step 4: Add butter and mix to form grainy paste.
Step 5: Add honey, vanilla extract, and eggs. Mix at medium speed until light and fluffy.
Step 6: Add flour mixture, raisins and chopped walnuts if desired, and blend at low speed until just combined.
Step 7: Drop by rounded tablespoons onto ungreased cookie sheets, 1 1/2 inches apart.
step 8: Bake 18-22 minutes, or until cookies are light golden brown.
Step 9: With spatula, immediately transfer to cooling rack.
Makes about 26-30 cookies.
