Mud Pie Cookie Recipe

Ingredients
3/4 cup shortening
1 1/2 cups granulated sugar
2/3 cup unsweetened cocoa powder
2 teaspoons baking powder
1 teaspoon instant coffee crystals
2 teaspoons water
3 large eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1/4 cup finely chopped pecans

Chocolate Frosting:
2/3 stick (1/3 cup) salted butter, softened
1 teaspoon vanilla extract
1/2 cup unsweetened cocoa powder
3 cups powdered sugar, divided
5 tablespoons milk, divided
1/3 cup semi-sweet chocolate chips

Hardware
Large bowl
Medium bowl
Cookie sheets
Mixer

Step 1: Preheat oven to 375 degrees F.
Step 2: In a large bowl, beat shortening with an electric mixer set on medium-high speed for 30 seconds.
Step 3: Add sugar, cocoa powder, and baking powder. Beat until combined.
Step 4: Dissolve coffee crystals in water.
Step 5: Add coffee mixture, eggs and vanilla extract; beat until combined.
Step 6: Beat in as much flour as possible with electric mixer.
Step 7: Stir in remaining flour and pecans with a wooden spoon.
Step 8: Shape dough into 1-inch balls. Place balls 2-inches apart on an ungreased cookie sheet. Press thumb into center of each cookie.
Step 9: Bake 8-10 minutes or until edges are set. Transfer cookies to cooling surface.

Chocolate Frosting:
Step 1: In a medium bowl, beat 1/3 cup butter and 1 teaspoon vanilla extract on medium speed for 30 seconds.
Step 2: Slowly beat in 1/2 cup powdered cocoa and 1 1/2 cups powdered sugar.
Step 3: Beat in 2 tablespoons milk.
Step 4: Gradually beat in remaining 1 1/2 cups powdered sugar and 1-3 additional tablespoons milk to make spreading consistency.
Step 5: Stir in chocolate chips.
Step 6: Spread over top of each cookie and let set.
