Lime Squares Cookie Recipe
The lime squares cookie recipe is a variation of the ever so popular lemon bars! Lime juice and nuts add a new twist to this old classic.
Ingredients
Cookie Crust:
2 sticks (1 cup) salted butter, melted
2 cups all-purpose flour
1/2 cups powdered sugar
1/2 cup ground almonds
Filling:
4 large eggs
2 cups granulated sugar
1/3 cup lime juice
1/4 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon grated lime peel
1-2 drops green food coloring
1/2 cup sliced almonds
powdered sugar
Hardware
Large bowl
Medium bowl
13x9x2-inch baking pan
Mixer
Step 1: Preheat oven to 350 degrees F.
Step 2: Lightly grease 13x9x2-inch baking pan; set aside.
Step 3: In a medium bowl, Combine all crust ingredients and mix well.
Step 4: Press into prepared baking pan.
Step 5: Bake 13-15 minutes or until edges are lightly browned.
Step 6: While crust is baking, in a large bowl. combine eggs, sugar, lime juice, flour, baking powder, lime peel, and food coloring. Beat with an electric mixer set at medium until frothy.
Step 7: Pour over hot crust. Sprinkle with almonds.
Step 8: Bake for 20-25 minutes or until light golden brown. Cool completely before cutting into squares.
Makes 48 squares.
