Lemon Shortbread Bars Recipe
The lemon shortbread bars recipe is a twist an old favorite. Take a shortbread recipe, turn it into a bar cookie, and add lemon and pecans-and you have a great tasting treat!
Ingredients
1 stick (1/2 cup) plus two tablespoons salted butter, softened
1/2 cup powdered sugar
1 1/4 cup all-purpose flour
1/2 teaspoon lemon extract
1/2 teaspoon vanilla extract
1/4 teaspoon grated lemon peel
1/2 cup chopped pecans
Hardware
Large bowl
9-inch square baking pan
Mixer
Step 1: Preheat oven to 325 degrees F.
Step 2: In a large bowl, with an electric mixer set on medium-high, cream together the butter and sugar.
Step 3: Add flour, vanilla extract, and lemon extract; mix well.
Step 4: Stir in lemon peel.
Step 5: Press into an ungreased 9-inch square baking pan.
Step 6: Score with a sharp knife into 16 squares.
Step 7: Prick each square twice with a fork.
Step 8: Sprinkle with chopped pecans.
Step 9: Bake for 20-25 minutes or until lightly browned and pecans are toasted. Cool for 5 minutes. Cut along score lines.
Makes 16 squares.
