Lemon Poppy Seed Rounds Cookie Recipe
The lemon poppy seed rounds cookie recipe reminds me of the breakfast muffin that combines the same great flavors!
1 1/2 sticks (3/4 cup) salted butter, softened
1 cup granulated sugar
1 large egg
1 tablespoon milk
2 teaspoons grated lemon peel
1/2 teaspoon vanilla extract
1/2 teaspoon lemon extract
2 1/2 cups all-purpose flour
1/4 cup poppy seeds
Step 1: Preheat oven to 350 degrees F.
Step 1: In a large bowl, cream butter and sugar with an electric mixer set on medium speed.
Step 2: Beat in egg, milk, lemon peel, and extracts.
Step 3: Add flour and poppy seeds; mix well.
Step 4: Shape into two 8-inch rolls; wrap each in plastic wrap and refrigerate for 3 hours.
Step 5: Preheat oven to 350 degrees F.
Step 6: Unwrap dough and cut into 1/4-inch slices. Place 2 inches part on an ungreased cookie sheet.
Step 7: Bake 10-12 minutes or until edges are golden brown. Let set for 2 minutes before transferring to cooling surface.
Makes 60 cookies.
