Lemon Chocolate Chip Cookie Recipe
This lemon chocolate chip cookie recipe is one of my favorites, with a citrus splash added to a traditional recipe.
Ingredients:
2 cups all-purpose flour
1/2 teaspoon baking soda
1 teaspoon ground coriander
1 1/2 sticks (3/4 cup) salted butter, softened
1 cup granulated sugar
2 large eggs
1 1/2 teaspoon lemon extract
9 ounces mini chocolate chips (about 1 1/2 cups)
Hardware:
Whisk
Medium bowl
Large bowl
Parchment paper
Baking sheets
Mixer
Preheat oven to 325 F.
Step 1: Position oven rack to middle of oven. Line cooking sheets with parchment paper.
Step 2: In a medium bowl whisk together flour, baking soda, and coriander; set aside.
Step 3: In a large bowl cream butter and sugar with an electric mixer at medium speed to form a grainy paste.
Step 4: Add eggs and lemon extract, and beat well, scrape down sides of bowl as needed.
Step 5: Add flour mixture and the chocolate chips, and blend at low speed just until combined. Do not overmix.
Step 6: Drop dough by teaspoons onto prepared cookie sheets, 1 1/2 inches apart. Bake for 14 - 15 minutes. Do not over bake. Transfer cookies with a spatula to cooling rack.
Makes 48 cookies.
