Kipfel Cookies Recipe
The kipfel cookies recipe comes from Eastern Europe. This cookie has sour cream in the pastry and plumps like a dumpling!
Ingredients
1 stick (1/2 cup) salted butter
2 cups all-purpose flour
1/4 cup granulated sugar
2 egg yolks
1/2 cup dairy sour cream
Filling:
1/2 cup granulated sugar
2 egg whites
1 1/4 cups ground almonds or walnuts
1 tablespoon lemon juice
3/4 teaspoon ground cinnamon
Topping:
powdered sugar
ground cinnamon
Hardware
Medium bowl
Small bowl
Rolling pin
4-inch round cookie cutter or drinking glass
Cookie sheets
Pastry blender (optional)
Step 1: Preheat oven to 375 degrees F.
Step 2: In a medium bowl, cut butter with pastry blender or two knives into flour until mixture resembles coarse crumbs.
Step 3: Stir in 1/4 cup granulated sugar.
Step 4: In a small bowl, combine egg yolks and sour cream.
Step 5: Make a well in flour mixture and pour egg mixture into it. Stir until mixture form a ball.
Step 6: Divide dough in half. Keep unused half of dough covered. Lightly flour a work space and rolling pin. Roll dough out to 1/16 inch thick. Using a floured 4-inch round cookie cutter, cut out dough. Repeat with remaining half of dough.
Step 7: In a small bowl, beat egg whites.
Step 8: Stir in ground nuts, 1/2 cup granulated sugar, lemon juice, and cinnamon.
Step 9: Spread a rounded teaspoon of filling onto each round within a 1/4 inch of edge. Roll up. Seal edges with tines of fork.
Step 10: Place each roll seam side down 1 1/2 inches apart on ungreased cookie sheet. Bake for 10-12 minutes or until lightly browned. Transfer cookies to cooling surface. Sprinkle each cookie with 50/50 mixture of granulated sugar and ground cinnamon.
