Jam Thumbprint Cookie Recipe
Everyone loves the jam thumbprint cookie recipe. Besides tasting great, this cookie also looks very festive.
Ingredients
1 stick + 3 tablespoons (2/3 cup) salted butter, softened
1/3 cup granulated sugar.
2 large egg yolks
1 teaspoon vanilla extract
1/2 teaspoon salt
1 1/2 cups all-purpose flour
Egg wash:
2 large egg whites
Rolling:
3/4 cup chopped walnuts
Topping:
favorite jam
Hardware
Large bowl
2 small bowls
Cookie sheets
Mixer
Step 1: Preheat oven to 350 degrees F.
Step 2: Lightly grease cookie sheets; set aside.
Step 3: In a large bowl, with an electric mixer cream together butter and sugar, until light and fluffy.
Step 4: Add egg yolks, vanilla extract, and salt and beat well.
Step 5: Gradually add flour, mix until well combined.
Step 6: Shape dough into 3/4-inch balls.
Step 7: In a small bowl, slightly beat egg whites.
Step 8: Dip dough balls into egg whites, then roll around in small bowl filled with chopped walnuts.
Step 9: Place 1 inch apart on prepared cookie sheets. Press down with thumb on each cookie making a depression.
Step 10: Bake 15 minutes, or until lightly browned. Remove from cookie sheet to cooling surface.
Step 11: When cooled fill depression with favorite jam.
Makes about 36 cookies.
