Jack O Lantern Cookie Recipe
The jack o lantern cookie recipe is fun to make, fun to eat, and are bound to light up eager eyes with their festive look!
Ingredients
1 stick (1/2 cup) salted butter, softened
1 cup granulated sugar
1 egg
1 teaspoon vanilla extract
2 cups all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 tablespoon milk
Orange and green food coloring (mixing red and yellow together with make orange)
1 package hard lemon drops candy (about 5 ounces), crushed
Hardware
Large bowl
Small bowl
Aluminum foil
Cookie sheets
Mixer
Step 1: Preheat oven to 350 degrees F.
Step 2: Cover cookie sheets with foil; set aside.
Step 3: In a large bowl, with an electric mixer set on medium-high setting, cream together the butter and sugar for 30 seconds.
Step 4: Add egg and vanilla extract, beat until smooth.
Step 5: Beat in flour, baking powder, and salt.
Step 6: Add the tablespoon of milk if batter is too stiff.
Step 7: In a small bowl, place 1/8 of the dough. Add green food coloring.
Step 8: Color the remaining dough orange.
Step 9: Form the orange dough into 1-inch balls; flatten with your hand to make into a pumpkin shape. Place 1 inch apart on prepared cookie sheets.
Step 10: Roll green dough into small stems, attach to the top of each pumpkin.
Step 11: Carefully cut out eyes, nose, and mouth with a sharp knife to form a jack o lantern.
Step 12: Fill holes with crushed lemon drop candies.
Step 13: Bake 8-10 minutes or until done but not browned. Allow to cool for 10 minutes before peeling cookies off foil.
The jack o lantern cookie recipe makes about 24 cookies.
