Holiday Cheesecake Bars Recipe
The holiday cheesecake bars recipe is a take on the simplicity of cheesecake, but kicked up with candied cherries to make it festive!
Ingredients
Crumb Mixture:
2/3 stick (1/3 cup) salted butter, softened
1/3 cup firmly packed brown sugar
1 cup all-purpose flour
Cheesecake Filling:
1 (8 ounce) package cream cheese, softened
1/4 cup granulated sugar
1 tablespoon lemon juice
1/4 cup chopped candied red cherries
1/4 cup chopped candied green cherries
Hardware
2 x medium bowls
8x8-inch baking pan
Mixer
Step 1: Preheat oven to 350 degrees F.
Step 2: In a medium bowl, combine all crumb mixture ingredients. Beat at low speed until well mixed. Reserve 1/2 cup of mixture for topping.
Step 3: Press remaining mixture on bottom of ungreased 8x8-inch baking pan.
Step 4: Bake 10-12 minutes or until lightly browned.
Step 5: In a medium bowl, with an electric mixer set at medium speed beat cream cheese until fluffy.
Step 6: Combine the rest of the filling ingredients to bowl except cherries. Beat at medium speed until smooth.
Step 7: Stir in candied cherries.
Step 8: Spread evenly over the top of crumb mixture.
Step 9: Sprinkle reserved crumb mixture over filling layer.
Step 10: Bake 20-22 minutes or until set. Cool before cutting into bars. Store in refrigerator.
Makes 16 bars.
