Hawaiian Pineapple Cookie Recipe
The Hawaiian pineapple cookie recipe combines tropical ingredients for a taste that is absolutely paradise!
Ingredients
2 sticks (1 cup) salted butter, softened
1 cup granulated sugar
1 cup packed light brown sugar
2 eggs
1 teaspoon vanilla extract
4 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 can (8 ounces) crushed pineapple, drained
1 cup chopped walnuts
1/4 cup chopped maraschino cherries

Step 1: Preheat oven to 425 degrees F.
Step 2: In a medium bowl, whisk together the flour, baking powder, baking soda, and salt; set aside.
Step 3: In a large bowl, cream the butter and sugars together with an electric mixer set on medium-high for 30 seconds.
Step 4: Add eggs one at a time, beating well after each addition.
Step 5: Beat in vanilla extract.
Step 6: Beat flour mixture into butter mixture.
Step 7: Stir in pineapple, walnuts, and cherries.
Step 8: Drop by tablespoons 2 inches apart onto ungreased cookie sheets.
Step 9: Bake for 7-9 minutes or until lightly browned. Transfer cookies to cooling surface.
Makes 74 cookies.
