Cranberry Oatmeal Crisps Recipe
The cranberry oatmeal crisps recipe combines the great tastes of oats, nuts, cinnamon, and cranberries!
Ingredients
1 cup butter-flavored shortening
1 cup granulated sugar
1 cup packed brown sugar
2 eggs
2 teaspoons vanilla extract
2 1/2 cups old fashioned oats
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon baking powder
1 1/3 cups dried cranberries
1 cup coarsely chopped walnuts

Step 1: Preheat oven to 350 degrees F.
Step 2: Lightly grease cookie sheets; set aside.
Step 3: In a medium bowl, whisk together the flour, oats, salt, baking soda, baking powder, and ground cinnamon; set aside.
Step 4: In a large bowl, cream together the shortening and sugars with an electric mixer set on medium-high speed.
Step 5: Add eggs, one at a time, beating well after each addition.
Step 6: Beat in vanilla extract.
Step 7: Gradually add the flour mixture to the shortening mixture. Beat until combined.
Step 8: Stir in the dried cranberries and chopped walnuts.
Step 9: Drop by tablespoons 2 inches apart onto ungreased cookie sheets.
Step 10: Bake for 12-14 minutes or until lightly browned. Immediately transfer cookies to a cooling surface.
Makes 60 cookies.
