Cornflake No Bake Cookie Recipe

This cornflake no bake cookie recipe is as easy as it is unique. The cornflakes and peanut butter give it a great looking color and texture, as well as taste.

Ingredients
1 cup corn syrup
1 cup granulated sugar
1 cup creamy peanut butter
4 1/2 cups cornflakes cereal
1 cup semi-sweet chocolate chips (optional topping)

Hardware
3-quart saucepan
Microwave safe bowl
Waxed paper

Step 1: In 3-quart saucepan over medium heat, combine corn syrup and white sugar.
Step 2: Bring mixture to boil, boil for 1 minute and remove from heat.
Step 3: Sir in peanut butter until smooth and creamy.
Step 4: Mix in cornflakes until evenly coated.
Step 5: Drop by spoonfuls onto wax paper, let cool.

Optional Topping:
Step 1: In microwave safe bowl, melt semi-sweet chocolate chips.
Step 2: With fork drizzle or spread chocolate over each cookie, let cool.

Makes 20-24 cookies.
