Coffee Crisps Cookie Recipe
The coffee crisps cookie recipe will surely please the coffee lover in the family! With coffee in both the cookie and the icing it’s sure to be a hit served with-what else?-a hot cup of coffee!
4 teaspoons water
2 teaspoons instant coffee crystals or instant espresso powder
1 stick (1/2 cup) salted butter, softened
1 cup granulated sugar
1/4 teaspoon salt
1 1/2 cups all-purpose flour
1 tablespoon whipping cream
1/8 teaspoon instant coffee crystals or instant espresso powder
1 cup powdered sugar
2 x small bowls
Pastry bag with fine tip or small plastic sandwich bag
Step 1: Preheat oven to 350 degrees F.
Step 2: Line cookie sheets with parchment paper; set aside.
Step 3: In a small bowl, stir together water and coffee crystals until crystals dissolve; set aside.
Step 4: In a large bowl, beat butter with an electric mixer on medium-high speed for 30 seconds.
Step 5: Add sugar and salt. Beat until combined.
Step 6: Beat in eggs and coffee mixture until combined.
Step 7: Beat in as much flour as you can with mixer, stir in remaining flour with spoon.
Step 8: Drop dough by rounded teaspoons onto prepared cookie sheets. Spread dough into 2-inch circles.
Step 9: Bake for 9-11 minutes or until edges are lightly browned. Let cookies set on cookie sheet for 2 minutes before transferring to cooling surface.
Step 1: In a small bowl, stir together 1 tablespoon of whipping cream and 1/8 teaspoon of instant coffee crystals until crystals dissolve.
Step 2: Stir in 1 cup of powdered sugar. Add more whipping cream if necessary to make into piping consistency.
Step 3: Place frosting into pastry bag or small plastic sandwich bag with corner tip cut out. Frost tops of cookies with diagonal or zigzag lines.
The coffee crisps cookie recipe makes 20 cookies.
