Chocolate Shortbread Cookie Recipe
The chocolate shortbread cookie recipe takes a classic and adds the richness of chocolate!
Ingredients
1 1/2 cups all-purpose flour
1/3 cup unsweetened cocoa powder
1 1/2 sticks (3/4 cup) salted butter, softened
3/4 cup powdered sugar
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1/8 teaspoon salt

Step 1: Preheat oven to 325 degrees F.
Step 2: Lightly grease cookie sheet; set aside.
Step 3: In a medium bowl, whisk together flour and cocoa powder; set aside.
Step 4: In a large bowl, beat butter with an electric mixer on high speed for 30 seconds.
Step 5: Add powdered sugar, vanilla extract, almond extract, and salt. Beat until combined.
Step 6: Add flour mixture and beat until mixture resembles fine crumbs and start to cling. Form mixture into a ball and knead until smooth.
Step 7: Pat dough into a 9-inch diameter circle on prepared cookie sheet. Use a long sharp knife and cut dough into 12 wedges. Prick each wedge three times with a fork.
Step 8: Bake 30 minutes or until top look dry. Cut into wedges again while warm. Cool on cookie sheet for 4 minutes, then transfer to cooling surface.
Makes 12 wedges.
