Chocolate Meringue Puffs Recipe
The chocolate meringue puffs recipe is rich with chocolate and light as a cloud, with an elegant look!
Ingredients
2 ounces unsweetened baking chocolate squares
1/4 cup powdered sugar
3 tablespoons unsweetened cocoa powder
3 large egg whites
1/2 teaspoon cream of tartar
1/2 cup granulated sugar
Hardware
Whisk
Rubber spatula
Medium bowl
Small bowl
Cookie sheets
Pastry bag or pastry decorator
Aluminum foil
Mixer
Step 1: Line cookie sheets with aluminum foil; set aside.
Step 2: Finely chop baking chocolate in a blender; set aside.
Step 3: In a small bowl, whisk together powdered sugar and cocoa; set aside.
Step 4: In a medium bowl, beat egg whites and cream of tartar with an electric mixer at medium speed until mixture thickens.
Step 5: Increase speed to high, while adding granulated sugar slowly. Beat until mixture forms stiff peaks and turns glossy.
Step 6: Gently fold in cocoa mixture and chopped chocolate with a rubber spatula. Try to mix until a uniform color appears, but do not break the whites.
Step 7: Fill pastry bag or decorator fitted with star tip with the meringue. Pipe meringue in decorative shapes 2 inches apart onto prepared cookie sheets.
Step 8: Let meringues dry at room temperature for 1 hour
Step 9: Preheat oven to 215 degrees F.
Step 10: Bake for 1 hour. When cool remove from foil.
Makes 30 puffs.
