Chocolate Chip Meringue Bar Cookie Recipe
The chocolate chip meringue bar cookie recipe has a light fluffy topping over a rich chocolate base!
Ingredients
2 sticks (1 cup) salted butter, melted
1/2 cup granulated sugar
1/2 cup packed brown sugar
2 egg yolks
1 teaspoon water
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
2 cups semi-sweet chocolate chips
Topping:
2 egg whites
1 cup packed brown sugar

2 x medium bowls
13x9x2-inch baking pan
Mixer
Step 1: Preheat oven to 350 degrees F.
Step 2: Lightly grease a 13x9x2-inch baking pan; set aside.
Step 3: In a medium bowl, whisk together flour, baking powder, baking soda, and salt; set aside.
Step 4: In a large bowl, cream butter and sugars with an electric mixer set on medium-high.
Step 5: Beat in egg yolks, water, and vanilla extract; mix well.
Step 6: Add flour mixture until combined.
Step 7: Spread into prepared 13x9x2-inch baking pan.
Step 8: Sprinkle with chocolate chips.
Step 9: In medium bowl, beat egg whites until stiff peaks form.
Step 10: Gradually fold in brown sugar and mix well.
Step 11: Spread evenly over chips.
Step 12: Bake for 25-30 minutes or until golden brown. Cool completely before cutting into bars. Store in refrigerator.
Makes 48 bars.
