Chocolate Cashew Bar Recipe
This chocolate cashew bar recipe is a great one; the corn syrup gives it a unique, chewy chocolate flavor.
Ingredients
Crust:
1 1/2 cups all-purpose flour
1/2 cup salted butter, softened
1/4 cup firmly packed brown sugar
Topping:
3/4 cup granulated sugar
3/4 cup dark corn syrup
3 eggs, slightly beaten
3 tablespoons salted butter, melted
2 teaspoons vanilla extract
1 1/2 cups salted cashews, coarsely chopped
1 1/2 cups semi-sweet chocolate chips

13x9 inch baking pan
Medium bowl

Step 1: Preheat oven to 350 degrees F.
Step 2: In medium bowl combine butter, brown sugar and flour. Beat on low speed until mixture resembles coarse crumbs.
Step 3: Press crumb mixture into ungeased 13x9 inch baking pan. Bake for 15 minutes or until edges just begin to turn golden brown.
Step 4: Meanwhile, stir together sugar, corn syrup, eggs, 3 tablespoons of melted butter, and vanilla extract.
Step 5: Stir in cashews and chocolate chips.
Step 6: Spread topping over hot, partially baked crust.
Step 7: Continue baking 28-33 minutes or until set.
Step 8: Cool completely, cut into bars.
Makes 20-24 bars.
