Chewy Caramel Oatmeal Bars Recipe
The chewy caramel oatmeal bars recipe is awesome! It tastes like a thick oatmeal cookie with chocolate and caramel thrown in for a kick! A great way to eat these bars is to heat them up just a little in the microwave and add a scoop of ice cream on the side!
Ingredients
2 sticks (1 cup) salted butter, softened
2 1/2 cups all-purpose flour, divided
2 cups packed brown sugar
2 large eggs
2 teaspoons vanilla extract
1 teaspoon baking soda
3 cups quick cooking oats
6 ounces (about 1 cup) semisweet chocolate chips
1/2 cup chopped pecans or walnuts
24 caramels candies, unwrapped
2 tablespoons milk
Hardware
Large bowl
Small saucepan
15 x 10 x 2-inch baking pan
Mixer
Step 1: In a large bowl, with an electric mixer set at medium-high speed beat butter for 30 seconds.
Step 2: Add 1 cup of flour, brown sugar, eggs, vanilla extract, and baking soda. Beat until combined.
Step 3: Beat in remaining 1 1/2 cups of flour.
Step 4: Stir in oats.
Step 5: Press 3 1/2 cups of dough into bottom of an ungreased 15 x 10 x 2-inch baking pan.
Step 6: Sprinkle with chopped nuts and chocolate chips.
Step 7: Drop remaining dough by teaspoons over top of chocolate chips. Flatten slightly.
Step 8: Preheat oven to 350 degrees F.
Step 9: Meanwhile, in a small saucepan, melt caramels and milk over low heat.
Step 10: Drizzle melted caramel over top of dough.
Step 11: Bake for 25 minutes or until top is light brown. Cool before cutting into bars.
Makes 60 bars.
