Cherry Coconut Bar Cookie Recipe
The cherry coconut bar cookie recipe is easy to make, and combines the great taste of a buttery cookie bottom and a mixture of cherries, nuts, and coconut on top!
Ingredients
Cookie Bottom:
1 cup all-purpose flour
3 tablespoons powdered sugar
1 stick (1/2 cup) salted butter, cold
Filling:
2 large eggs
1 cup granulated sugar
1 teaspoon vanilla extract
1/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
3/4 cup chopped walnuts
1/2 cup halved maraschino cherries
1/2 cup flaked coconut
Hardware
Large bowl
Medium bowl
13x9x2-inch baking pan
Mixer
Step 1: Preheat oven to 350 degrees F.
Step 2: Lightly grease 13x9x2-inch baking pan; set aside.
Step 3: In a medium bowl, combine flour and powdered sugar.
Step 4: Cut in cold butter until a crumbly mixture results.
Step 5: Press mixture into prepared baking pan.
Step 6: Bake 10-12 minutes or until lightly browned. Remove from oven and cool.
Step 7: In a large bowl, beat together eggs, sugar, and vanilla extract with an electric mixer set on medium speed.
Step 8: Add flour, baking powder, and salt. Mix until combined.
Step 9: Stir in walnuts, cherries, and coconut.
Step 10: Spread over crust. Bake for 20-25 minutes or until firm. Cool completely before cutting into bars.
Makes 36 bars.
