Butterscotch Banana Cookie Recipe



The butterscotch banana cookie recipe combines some great flavors, and the addition of banana puts it over the top!

Ingredients
1 1/2 sticks (3/4 cup) salted butter, softened
1 cup granulated sugar
1 large egg
1 1/2 cups all-purpose flour
1/2 teaspoon salt
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
1 cup mashed ripe bananas
1 1/2 cups quick-cooking oats
1 1/2 cups chopped pecans
1 cup butterscotch chips
1 cup chopped dates

Mixer

Step 1: Preheat oven to 350 degrees F.
Step 2: Lightly grease cookie sheets; set aside.
Step 3: In a medium bowl, whisk together the flour, salt, baking soda, and ground nutmeg; set aside.
Step 4: In a large bowl, cream butter and sugar with an electric mixer set on medium-high for 30 seconds.
Step 5: Beat in egg.
Step 6: Beat the flour mixture into the butter mixture.
Step 7: Add bananas. Stir to combine.
Step 8: Stir in the oats, pecans, butterscotch chips, and dates.
Step 9: Drop by teaspoons 2 inches apart on prepared cookie sheets.
Step 10: Bake for 12-14 minutes or until lightly browned. Transfer cookies to cooling surface.

Makes 125 cookies.
