Blueberry Oatmeal Cookie Recipe



The blueberry oatmeal cookie recipe is hearty, with a great homemade country taste!

Ingredients
1 stick (1/2 cup) salted butter, softened
1 cup packed brown sugar
1 large egg
1 teaspoon vanilla extract
1 1/2 cups quick-cooking oats
1 cup all-purpose flour
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon baking soda
1/4 teaspoon baking powder
1 cup fresh or frozen blueberries

Hardware

Medium bowl
Cookie sheets
Mixer

Step 1: Preheat oven to 350 degrees F.
Step 2: Lightly grease baking sheets; set aside.
Step 3: In a medium bowl, whisk together flour, oats, cinnamon, baking soda, baking powder, and salt; set aside.
Step 4: In a large bowl, cream together butter and brown sugar with an eletric mixer set on medium-high.
Step 5: Beat in eggs and vanilla extract.
Step 6: Gradually add flour mixture until just combined.
Step 7: Gently stir in blueberries.
Step 8: Drop by heaping tablespoons onto prepared cookie sheets 2 inches apart.
Step 9: Bake for 12-14 minutes or until golden brown. Transfer cookies to cooling surface.

Makes 36 cookies.
