Blueberry Bar Cookie Recipe



The blueberry bar cookie recipe is reminiscent of a cobbler, with its crumbly oats topping!

Ingredients
1 1/2 cups quick-cooking rolled oats
1 cup all-purpose flour
3/4 packed brown sugar
1 1/2 sticks (3/4 cup) salted butter
1 cup frozen blueberry preserves
1 teaspoon ground lemon peel

Hardware
Whisk
Medium bowl
Small bowl
8x8x2-inch baking pan
Pastry blender (optional)

Step 1: Preheat oven to 350 degrees F.
Step 2: Line an 8x8x2-inch baking pan with foil, extending foil over edges of pan.
Step 3: In a medium bowl, whisk together oats, flour, and brown sugar. Reserve 1 cup of mixture.
Step 4: Press remaining oat mixture into the bottom of the prepared baking pan.
Step 5: Bake for 25 minutes.
Step 6: Meanwhile, for filling, in a small bowl combine frozen blueberry preserves, and lemon peel.
Step 7: Carefully spread over baked crust.
Step 8: Sprinkle with reserved oat mixture; press lightly into blueberry mixture.
Step 9: Bake 30 minutes more or until top is golden brown. Cool completely before cutting into bars.

Makes 25 bars.
