History: The term biscotti, in Italian dialect, refers to any type of cookie. In North America, biscotti are used to describe a long, dry, hard, twice-baked cookie. The Biscotti has always been a dipping cookie; In Italy they are generally dipped into wines like Vin Santo. In America, coffee is the drink of choice.
Traditionally biscotti were almond flavored. Today, because of their popularity in coffee houses, the sky is the limit to what ingredients can be added to kick-up the flavor of these tasty cookies: dried fruits, chocolate, nuts, seeds, spices, etc. Frequently they are found iced with melted chocolate or frosting, topped with nuts or even coated with colored sprinkles.
Fun Fact: Columbus was one of the first to use biscotti as a ration on board his sailing vessels. Because of their long storage ability, they were an ideal food for sailors, soldiers, and fisherman.
